The way I understand our law is that as long as you didn't intend to kill them and you only used 'enough force to necessary' to defend yourself, you're fine. Enough force necessary is the important part here - if he stabbed the guy repeatedly while in a struggle with the two, that's reasonable force. If he kept stabbing him after the guy was down, he's not really defending himself anymore in the eyes of the law.
