Because he didn't. Simple enough. GOD created every living creature and brought it to Adam to see what he would call them. Something Eve didn't witness. One of the big reasons she fell for whatever lies satan fed her is because of the fact that he could have said he created it all, and she wouldn't have known any different.

It's impossible for it to have happened that way. At least one of everything was made AFTER Adam. He was a witness of it.
