I have a great suggestion! New Mexico Style Enchiladas (a la BH)
Tortilla Chips
Ground Beef (1 lb)
1 Green pepper (chopped)
5-6 Green onions (chopped)
Green olive (1/3 cup - sliced)
Black olive (small can - sliced)
Jalapeno to taste (sliced or chopped fine)
Cheese (Colby Jack - shredded)
Can of enchilada sauce (red or green)
Sour cream
You can do all the prep ahead of time and put the ingredients in containers in the frig and throw it together in a few minutes. Then cook it for 35
-40 minutes.
Fry the ground beef and drain. While it's in the pan, add the green pepper, green onion, green olive, black olive and jalapeno and cook for 5 minutes
more, gently stirring a few times.
Spray a baking dish with pam. Glass or metal is fine, but it should be about 9x11" to 11x13".
Put a layer of chips on the bottom of the pan. I smash them
a little so they break and lay fairly flat. Then put half the ground beef mixture
on top. Pour half of the enchilada sauce on and top with half of the cheese. Then add another layer of chips, meat, sauce and cheese.
Bake at 350 for 35-40 minutes. Let stand for 5 minutes and cut with a serrated knife. Serve with sour cream and chips on the side and maybe a salad.
This is a killer meal. Even if you don't use it for your date, you should try it sometime.
