The lifting power of hot air is very different than the lifting power of hydrogen. The Egyptians didn't have hydrogen gas (they would need airtight containers (which they couldn't make) to store the gas.
While you can separate hydrogen from water with electricity (which they didn't have), it's a long and expensive process and prone to leakage. Other methods that we use were unavailable to them
