I didn't watch the video because I know about the fungus and other circumstances but to anyone that had not heard:

Do yourself a favor and cut away the small, often black bits from the ends, especially on the side that doesn't have the stem. The fungizid that has to be used so we do not loose the whole banana tree population, can enter in there and it's not healthy to ingest. I has nothing to do with the sugar reacting, that's separate reason for darkening.

Good thread, just learned a lot about bananas!

Had some small darker green bananas in the Bahamas that were very sweet. They also had this fruit called sopadillo that looked like a furry avacado but tasted like honey drenched pears!

The golden raspberry variety also tastes like an orange creamsicle

Sapodillas come in a lot of varieties and their flavors and texture are different. They are a common tree in Florida,

Personally, I am not crazy about them. To me, like jackfruit, and the sapote, they are kind of an acquired taste.

Way cool video, thanks. I worked and a health food store and we had some bananas that wouldn't ripen. Was about two weeks we were out of bananas. They said it was that they weren't gassed, supposedly some process they do to make them ripen but there was nothing about that in the video. Guess I'll never know what happened to those bananas.

There was nothing wrong with the bananas. The gas just speeds up the ripening process. It can take a couple of weeks for a green banana to turn yellow, but the banana is fine.

Some of my bananas don't turn as yellow as what you are used to seeing in the store, but they are still ripe.

Bananas are used in different ways in different areas. In America, people way too much attention to what a fruit looks like on the outside. We miss out on a lot of goodness, because we don't like how a fruit looks on the outside.

The gassing process must take place not at the farm they come from then, am I right in assessing that? It happens later in the shipping process?

As far as looks go, you are right. It's the "fast foodization" of everything in our grocery stores. If you get McDonald's in Cali or NYC, it's supposed to taste the same. Similar concept, produce has to look the same and every aisle has to have the same stuff.

I am not banana expert. I am still learning from the tree I my on my property. I have found if you leave them on the trr too long to ripen, they are not as sweet.

The Numbies, some people call them lady fingers, I harvest early and leave on the porch to ripen. If I bring them inside they ripen faster. Because they are smaller, I eat two or three at a time, about the equivalent of a regular sized Cavendish. I still end up freezing them, because I just can't eat them all.

I make smoothies at least three times a week and this week was the first time I have bought bananas in almost a year. I have six banana trees, and none of them have bloomed yet this year. I don't know why. Like I said I am no expert.

It has been ridiculously hot, and we have either had too much rain, or not enough. It has happened before, and they came back twice as strong, so I am not worried.

Ok....freezing bananas.

I seem to remember trying to do this many years ago and it didn't work. My recollection is that they immediately went black. Maybe it was just the fridge that we would put them in, maybe a freezer works better? Yet, I remember as a kid going to Disneyland and getting their frozen banana, with the chocolate cover and nuts on it. Yum Yum.

In any case, I don't know.

Crikey, all this over the banana. I started a thread on Rush, the band, on another forum and the question, well, no need for details, but one dude said he'd never thought so much about the lyrics of one song so much in only forty years the song has been around. Kinda like this thread.

I don't think I've ever done the deep dive on bananas, even though I knew about the diseases and such. Now I understand the gassing process, which is pretty wild. Never thought different distributors would want them at certain times of ripeness but that there was a scale of ripeness.

Peel bananas before you freeze them.

Sometimes these threads do make you think, and then you realize things that you never thought of before.

I think that may be, because we really don't put much thought into everyday things. We are too busy, and have way too many distractions in our lives.We should spend more time smelling the roses, and eating bananas.
