Maybe baste with some delicious suka pinakurat while roasting

I've never heard of dry brine but I will look all that up. Thanks!

I'd definitely trade some beef for a few of those!

A couple goats thrown in wouldn't hurt my feelings either!.

MMMMMmmm Hmmmph!

Absolutely! Love goat curry myself. I wish the world was more that way without these silly regulations. Here in canada, I can eat anything I raise but can only feed it to folk who live in my house. So couldn't even invite the parents over for a rabbit curry unless I took the live animals to an approved slaughterhouse and had the do the deed at $8 a head, so it comes back with the official stamp and paperwork. Too complex and pricey for me. Oddly people can fish or hunt and distribute it freely or have people over for a meal.

5 lbs dressed, or on the foot?

5 lbs dressed is a nice sized dinner. On the foot, not so much.

On the foot, which is a pound or so shy of where they should be. I get some outstanding individuals once in awhile but I'm not getting consistent weights even line breeding back to them. Time will tell. It's all experimental. They are traditionally done one to a person like cornish game hens but I like having leftovers.

It's also called 'dry cure', but yeah...it's good!

I cure all kinds of meat. It's as much art as science, with a fair bit of science thrown in.

This is who will survive, and this defines who won't. Enjoy it liberals, cuz you ain't gettin' NONE of this action!!!!

The most far left leaning liberals I know barter exactly in that same manner.
My friend just traded some barn wood for supply of eggs. Honey for this or that, Pork for traded work.
Most farmers out here had Biden signs up.
Maybe some people think only Republicans are farmers, or barter or know how to live off the land, but that
Thinking is flawed, at least where I live.

I was just adding to the OPs story with my own slice of rural fiction.
