Our bodies have enzymes to detox histamines and balance them. One such enzyme is DAO. If you have some genetics you cannot make a proper amount of that enzyme and are at risk of having stuff like Asthma and skin conditions. That enzyme detoxes other tyramines too, to balance them in the body. Now Histamine makes energy and is a necessary thing in our body, but too much causes problems. If you do not have a bad DAO, certain foods can knock the Histamase made by DAO out which if consumed regularly can lead to too much histamine and damage. Now tomatoes destroy the enzyme, even cooked. Spinach can too, and avacados also destroy it. Pineapple destroys the enzyme too, but if the pineapple is fresh, there is some bromelaine in it to actually destroy the histamine but that is not heat stable.
Chocolate is a high histamine comfort food, no sugar required.
Some yogurts are high histamine, most tyramines are made from the effect of breaklng down of foods by microbes.
Ham actually has chemistry that stimulates the release of histamine from muscle reserves, it also is aged, so it has it's own histamines.
When you got a steak in the fridge histamines do not start to increase till after you cook it. The longer the meat sits after cooking, the more the histamines increase. Tyramines form when meat is raw and it is aged, but the natural proteinase in the meat destroys histamines till it is heated above like two hundred degrees. Reheating meat does not lower histamines, they are mostly heat stable. High histamine foods can make your nose run even when you are not really sick. High histamines can cause a cut to not heal very fast because the body goes wild and it winds up attacking any damaged flesh even when it is trying to heal.
Do not be afraid of Histamines, learn when you benefit by them and when you shouldn't increase levels.
Sugars increase dopamine in the brain, most comfort foods do. Stuff that makes you feel great does. Dopamine in the brain is more of a problem when you have the MAOB and COMT genes where you do not break it down. But if you do not have those genes, you make more of the enzyme if you consume high amounts, which leads to crashes when you do not eat it. That same kind of thing is happening in people who did opiates, they start to make more enzyme to break it down, then their body level goes to low and they get addicted and need more.
The damage done by dopamine as related to Alzheimer and parkinsons also is related to low acetylcholine levels. Nicotine will temporarily bind to acetylcholine recptors and can keep parkinsons at bay if there is not enough acetylcholine. Eating a couple of eggs gives your enough choline to keep you from getting deficient usually, half the daily requirement. But without the acetyl, which is basicaly vinegar, acetylcholine cannot form. We make acetyl in our bodies, but sometimes it gets too low or is deficient if we excrete it or if we do not have enough of a certain enzyme that converts it from a different chemistry. A lot of people take apple cider vinegar and feel better, this is a part of the reason. Others do not need it because their diet and microbia make enough.
I can provide links to most of this. Some meds block choline in the body which can unbalance the levels in the brain and lead to alzheimer and even parkinson disease. Quitting meds improperly can also lead to problems because it causes too much enzymes to be made, then the level plumets a needed chemistry if you do not slowly go off the med or forget a dose or two.
I have markers for parkinsons, autoimmune diseases, and alzheimer disease, and I kind of know I need to lower consumption of some foods that increase the odds of these diseases becoming a problem. I do not care if it happens after I am dead and gone. So I am attempting to moderate these foods in my diet. I only eat tomato products once a week, it lowers my risk of lots of problems but I like spagetti, pizza, and lasagna but am learning to give my body a break and chance to recover and it works great.
Knowing how things work gives me many choices of how to control things, my main issues being parkinson disease and lupus and RA because I have had relatives with these diseases. I cannot eat a lot of the so called foods that boost a person's immune system, especially stuff I really like like lettuce because I get too much nitrous oxide forming which leads to a spinny head. A lot of lunchmeats or ham with nitrites or even with celery powder in them also cause my immune system to over react. But for some strange reason if I eat a taco salad I do not get a bad spinny head, the hot sauce does something to keep it from happening as bad. It is probably because it has some of the chemical in it that overloads the cells and nervous system and dampens the reaction. Like killing pain by putting icy hot on the area when you run too much in track.
I am only touching on what I know. I could write a whole book on metabolics and what possible solutions there are, but everyone has different amounts of enzymes they create, so I cannot tell anyone what to eat. Only possible solutions to help to fix the problems and get rid of chronic problems that occur. Our bodies are complicated and everyone is different but some people share traits even when they are not related.
