If you are not familiar with authentic Cajun and Creole cuisine this video is the first couple chapters of the Bible. A lot more out there but the just of it; honor the holy trinity (3 ingredients), use local or fresh ingredients and layer those ingredients.

I’ve eaten at K-Paul’s in the French Quarter, New Orleans in 2014. It was one Of the best meals I’ve ever had!

I went to high school with one of his grandchildren. He told me Justin Wilson was not a very liked grandfather. Used the A word to describe him. I firmly believe that it's likely true. Great Cajun chef, if not the greatest. His show still airs from time to time but his jokes on that show are somewhat crass but regardless, he brought a lot of joy to people in the end with his cooking and demeanor. Way ahead of his time. I'm sure worst could be said about some of these reality chefs today.

I've been cooking from Prudhomme's first cook book for 40 years or so.
There's tons of both technique and procedure - as well as great recipes.
Back then he gave you all the recipes for his (not-yet-on-the-market) line of cooking spices.
Before K-Pauls, he was at Commander's Palace and that was a wonderful meal as well.

I liked that. First time I ever watched Prodhomme. Have a couple of his books, and cook a lot of his recipes, but never saw him cook in person.

So that was cool!

Here’s an interview with Paul, talking about his life from childhood. How he became a chef. Very interesting, he states that his family was so poor (Youngest of 13 children), they ate out a handful of times when he grew up.

Wow, I didn’t know he trained Emeril Lagasse. I started watching Emeril in 1999.

My parents always spoke of Paul Prudhomme. This man revolutionized Cajun and creole cooking.

Also didn’t realize he died in 2015. RIP

I am a huge fan of all 3 .
When on vacation to Louisiana , I always made it a point to go to Emeril's .
Paul did train Emeril , and later Emeril took over for him ...
