MMMMMM. I have a special place in my hear for polish food. My mom in her later teens had to stay with a couple that was Ukranian, and Polish. They
stayed close family friends, and one of my favorites that they made was perogies.
Every once in a while I'll make a big batch and freeze some for later.
I like doing a good mash with some sharp white cheddar and a little bit of extra strong horseradish right in there with it.
I par boil and then fry with a little bit of butter. If I don't have some good kielbasa on hand (sometimes our butcher doesn't have any of their good
homemade and smoked)... I'll just dice up some smoked salt pork and fry with the perogies and butter.
