As cooking styles go, there are lots of different types of breakfasts. There are French breakfasts, there are German breakfasts, Mexican breakfasts and there are traditional American breakfasts. There are all sorts of breakfasts. Probably one of the best breakfasts is the 'whatchagot' style breakfast which transcends all breakfasts. It's a little bit of this, a few of those, that lone mushroom in the drawer and that last little bit of cheese. Oh yeah, and the half onion from dinner last night and maybe the rest of the salsa in the jar.

So today's whatchagot breakfast was exceptional. On the menu...

- the leftover 1/2 of the Vidallia onion from last night's salad, chopped.
- the last 4 jumbo eggs
- 4 of the last soft corn tortillas, whole
- the rest of the queso cheese dip in the jar
- the last sausage patty from Sunday's breakfast, crumbled.
- almost all of the rest of the salsa in the jar in the frig
- salt and freshly ground pepper

Scramble up the eggs with the onion. In a separate small fry pan (heat - med/hi) place a couple pats of butter. When hot place a tortilla in the pan. Place some of the scrambled eggs on the tortilla, add some of the cheese sauce and the sausage. Hit it with a little salt and pepper. Cover with a buttered tortilla. When the bottom tortilla is golden brown, flip and brown other side.

Serve with salsa.

Breakfast burritos are, IMO, the epitome of breakfast.

When I do mine, I generally use eggs, salsa, sausage crumbles, shredded cheese, and potatoes that I season up with just salt, pepper, garlic, and olive oil that I slice into about 3/4" cubes and bake before mixing in with everything else.

When I'm feeling fancy, I slice up some avocado and maybe throw in some sour cream or greek yogurt.

Yours sounds good, too.

Full English is tops.

Bacon, sausage (proper sausage not what you get In the U.S), beans, fried egg, black pudding, hash brown, spam, mushrooms (if you like em), fried bread (in bacon fat), toast, cup of tea and orange juice.

Perfect for a hangover.

Other regional varieties do exist in the UK. Ie a big yin, ulster fry, full Welsh........

This wasn't a breakfast burrito, it was more like a breakfast quesadilla (but a thick one).

The tortilla's weren't rolled up, just flat.

Vegimite was something I never acquired a taste for when over in Asia. Still taste's like a big ol' cup of mold to me...and I LOVE bleu (and stilton) cheese too!

My daughter-in-law uses whatever is left over from dinner
into breakfast the next morning.I have taken left over rice
with vegetables and cooked some sausage and scrambled
everything up with eggs and cheese.After some time you
get used to seeing green beans or peas in your eggs.

I had a bowl of Raisin Bran and a cup of mud. Pretty much every day before work. Keeps me regular.

IMO, the best breakfasts are burgers.

Buried under bacon.

You can't go wrong (and I'm not killing, if I make breakfast, grilling burgers for breakfast isn't unusual for this house)
