Mama's Old Fashioned Peanut Butter Fudge

It is that time of year again when diets go out the window and special treats comes in!
I love making homemade goodies for my family and I use quality ingredients.A little love
and time goes a long way.Here is my basic peanut butter fudge recipe...

1-cup dark brown sugar
1-cup pure cane sugar
1-cup evaporated milk
Place these ingredients into a saucepan and stir under medium heat.
I have a small bowl of very cold water by my side as the candy cooks.
When the mixture comes to a boil,I keep stirring for 5 minutes and
then check to see if it's done.
I drip a few drops into the cold water and see if I can make a soft ball.
If I get a soft ball from the mixture,I then add the following...
1-cup of peanut butter(organic)
1-teaspoon vanilla extract
I stir the ingredients quickly and then pour into a buttered pan and chill
until firm. Slice into pieces and enjoy.It takes less than 30 minutes to make
this fudge.
You can add marshmallows or chopped nuts, if you want,but I don't use them.

The following recipe can be tweaked to fit any fudge you want to make...

2-cups cane sugar
1-cup evaporated milk
1-teaspoon vanilla
You can add any kind of chips,chocolates,butterscotch...I do recommend adding
chopped nuts to some of these though,cuts down on the "rich" taste.

Something that Augustus posted on another fudge thread has me thinking...
Maybe the next time I make dark chocolate fudge I will add some Tabasco
sauce in it.Should be a very interesting fudge.I had some chocolate candy
with some Tabasco sauce before and it wasn't too bad.If I make it,I will let
you guys know how it turned out.

Maybe I am weird, but does anyone else like their fudge to be 'grainy' with tiny sugar crystals in it, rather than soft and creamy?

Here is a recipe for fudge with cayenne pepper.

Cajun chef Justin Wilson put cayenne in everything, including desserts.

there is a much easier way to make fudge!!!! instead of white sugar brown sugar and evaporated milk...just use sweetened condensed milk......


1 can sweetened condensed milk i/2 cup peanut butter, 2 six ounce packages white chocolate 3/4 cup peanuts if you want nuts. 1 tsp vanilla

heat milk and peanut butter until bubbly add white chocolate, nuts vanilla pour into dish to harden

the really quick is 18 oz bag of chips any flavor and 1 can of sweetened condensed milk in the pot until the chips melt add vanilla and nuts if you want pour in the dish........one thing though when making chocolate it doesn't quite firm up like the other flavored chips so add a little extra chips otherwise totally goof proof and you don't have to stand for five minutes at the stove...unless you want to!!!!!!

can also melt in the microwave

It depends on how much fudge that I make.The recipe that I posted here
is a single batch size and fits an 8"x8" pan.

Not any that I am aware of.My husband wants me to make sugar-free fudge
and I don't know how to.
