Appease me! Appease me! Did you make your own spaghetti? Did you soak your own beans then cook them with seasoning? Did you make your own seasoning? How about Sour cream? Aaaack. It sounds like a skyline chili nightmare!!!

I can give you a quick Creme Fraiche recipe 4-1 cream to buttermilk.

No that Skyline/Cincinnati chili is a different thing altogether. Sort of a Greek thing with cinnamon or something. I've never been a fan.

I'm talking about ground beef, some store chili seasonings (and onions and whatnot), Brooks chili beans and Creamette spaghetti, cooked separately. Putting the spaghetti directly in the pot makes it too mushy.

I like to put my own cooked spaghetti in the bottom of the bowl, then ladle the chili on top. Some people use elbow macaroni, but that has too much school cafeteria callback for me. Raw diced onions and Fritos on top of that, maybe a dollop of Daisy sour cream and you got your Hoosier chili. Which I intend to cook up for Sunday's game viewing enjoyment. Colts v Chiefs, 1:00PM Eastern.

So I get it. People have lives and jobs and we are busy humans. You want the best so you go for brooks..... what if you tried two new things not for Sunday's chili but the chili after. Try soaking and seasoning your own beans and try making your own chili seasoning and feel closer to your food by putting your personal touch on it. It will be a little different but it will be miles better. The extra effort will turn great chili into effing great chili!!!

And the day after Sunday football chili, it was pretty awesome. Some things you just have to go with what you know. Chili and potato salad are two of them. For me, anyway. There's comfort in the familiar.

My potato salad....we all love it. people outside the family, not so much. I use only potato, mayo, jalapeno stuffed green olives (sliced) and diced red pepper marinated in oil. Salt/pepper to taste.

People see it and look at me like im an alien.

That sounds good,.

I do mine with quick pickled shallots and jalapenos, mustard, mayo, cilantro, celery and a bit of the pickling liquid.

Ill sometimes do one that is a scallion, and dill, and I mix some champagne vinegar into the mayo with a touch of sugar (like i am making a slaw dressing). I stick with the red pepper for color and flavor, though. And Ill add in some diced up pepperoncino.

That sounds good as well. I like a zestier potato salad, most people's are too bland for me and have me craving a bit more flavor and texture.

I have one that i use sour cream in. actually, i have 2. One uses sour cream and cream cheese (with red skin on potato).

I may end up trying some sour cream in the standard salad I like.
