for 3 days now the kids been asking 'when are you gonna make pizza again' (it's been almost 2 weeks since the last time).
So today I decided, it's pizza-day!
Preparing the dough was the first step off course, because without it you would just have spaghetti-sauce i guess.
Nicely filled with yeast-farts, herbs and spices


and spread on the baking tray with a generous layer of olive oil

That doesn't look like a pizza, i guess we need some toppings



tomato-sauce, emmental, mozarella, chopped bell paprika, portobello and ham, some fresh cherry-tomatoes, olives and more herbs and spices

Next stop....the oven


Next stop....attack!

Looks great, I like the choice of toppings.

A simple fare, I must share.



Pikelets drenched in maple syrup and sprinkled upon with edible embellishments most glorious!
Pikelets?? Smaller, thicker, sugarry versions of pancakes. I add extra sugar and a dash of vanilla essence to mine. I highly recommend them!

What a great thread! It's very inspiring.

I made some home made mini pizzas a couple of months ago, and took a picture.
I like to keep my pizzas simple.

Sauce:
3 very ripe tomatoes
corn, mushrooms
oregano, salt, freshly crushed black pepper
1 of those tiny cans of Hungarian tomato pure

Shredded Mozzarella cheese on top
I got the pizza dough recipe online, anyone will do.



And, yes, I like my pizza extra cheesy, it's more like cheese with a little pizza.


The second dish here was an Asian inspired cuisine.
I used :
2 chicken breasts, boned, skinned, cubed
salt, black pepper, sesame oil
crushed garlic, onions
long green beans, carrots
soy sauce, and 2 TSP of honey

We ate it with plain white rice, and a simple lettuce & cucumber salad salad with lemon and olive oil dressing.

All I can say is YUM!!!
And not just because I'm Canadian. And I also love maple syrup.

Thank you, likewise.

This is the one I use. It comes in 2 sizes.



I prefer this one to others, because it tastes fresher and is less salty than other tomato purees.

I typically use Italian purees for my cooking but I will give this one a shot if I can find it.

Okay, so I am late getting the Salsa in the fridge due to me not thinking about the stores running out of magoes this week...

But, it should be fabulous after the flavors marry for a few hours anyway.

Rest of the menu includes stuffed jalapenos and quesadillas!
I think I should test my margarita recipe just to be sure I've got it right!

That looks fantastic, great color combination from the ingredients. I love homemade stuffed jalapenos, what did you put in them?

Hopefully the drinks turn out great too. I think I may do an tequila-inspired cocktail later because you got me motivated.

I am going with goat cheese that I will spice up a little with some garlic and herbs.
Cream cheese (low fat) and shredded parm.
Green onion, sage, and cilantro.

YUMMY!!!!!

Okay so finally (don't get an iphone!) here is the rest!
*Forgive Apple for they know not what they do!*
Beautiful peppers!

Became YUMMY munchies!
Recipe:
7oz goat cheese (if you can find it seasoned already bonus otherwise add garlic and herbs...like rosemary, basil, etc)
Then approx 4-6 oz lowfat cream cheese or Neufchatel.
Seeded tomatoes about 1 cup.
Salt and Pepper.
A little lime juice for flair AND you are making Margaritas anyway!
Grill about 10-15 minutes! Let me tell you, they are rich!


I know it's Mother's Day and all but, it's 'smack your mama good!'

If you have any mango left over I don't see why you couldn't put it in the chicken quesadillas. These are filled with sauteed peppers (red, yellow, and green) onion, garlic, and cheddar and monterey jack cheese. Cook them in the oven. Ahead of time. Why stand over a griddle?! Just season chicken with:
Paprika
Onion and Garlic powder
Cayenne pepper
Cumin
