Myself, I thoroughly cook the filling, pack it into the peppers (which I cut in half) and then bake or broil them--ten minutes (check them), fifteen minutes (check them). Ground beef I brown and season (mixed with rice, etc.) in a pan before stuffing in peppers. Shrimp I steam in water and vinegar first. In my opinion, parboiling does make a difference although I will give Techy's excellent advice on that matter a go.

One question though: How do you cook it without it burning?

Most attempts ive made on a stuffed pepper have burnt the out side quite badly. Id be worried to make the sure the meat is cooked through it would burn the outside just like the others.

You only fry the filled peppers a bit in a pan, you don't cook it in there. After you fried/roasted them a bit they belong into a saucepan.

It will look something like this:

Maybe i wasn't that clear on this point, sry

Whoever said they put rice in there is correct, and the meat ratio should be 50:50. 80% pork meat is too much. This is according to my Russian girlfriend
But hey, each to their own, nice recipe

Yeah, just stick to your own variations if you already have experiences with that kind of meal. I'm just refering to my own experiences as well and of course to the recept i know.

We use the yellow & orange peppers because the Green/red peppers are too acidic. Additionally we use vegetable juice to cook them in covered in a casserole dish. V-8 just has too much salt, but the generic veggie juice (tomato juice) does just fine.

I love stuffed peppers! I put beef or sausage with rice in mine. I also make a nice red sauce and slow cook them for a couple hours.

My mom made them often when I was a kid.

Tasty! I'll have to check your recipe out!

This thread just made me extremely hungry!

I've never made stuffed peppers, although I have eaten them and they are soooooo good.
I might have to try this out sometime...
maybe soon.

Thanks for the recipe!
(and everyone's variations)

The peppers are still expensive at the roadside market, I suppose it will be another week or two before I get to trying this. When they get cheap, you can get four large peppers of your choice for a buck. I can't see paying two sixty nine a pound for them.

Thanks for the kind responses.

I'm thinking of posting some more "german" style meals but i'd also really like to get some response of how it tasted.

Does anyone have a good recipe for something like cabbage rolls or "pigs in the blanket"? I like those and need a good recipe.. The ones I knew with the good recipes are now dead and nobody seems to have the recipe.

edit on 6-8-2014 by rickymouse because: (no reason given)

Made these. Thanks for sharing the recipe. They were pretty good, but they came out too watery. Maybe I put too much water in with the tomato paste that they simmered (very very light bubbling) in for two hours?

Thanks for the response.

Well the peppers themself normally become pretty muddy, while the meat inside should still be kind of "firm to bite". Many eat the cooked peppers too but personaly i just separate them afterwards and only eat the meat + sauce + potatoes
.

You need the peppers though for the taste of the meat.
