I've always heard the demon one myself (i.e. the sneeze being the sick demon, the blessing being said to prevent it's return)....

A slight variation. The sneeze exposes your soul to demons on the outside which are posed to attack said soul until a "Bless you" scares them off.

I have always heard that your heart skips a beat when you sneeze. So people say "bless you" because you didnt die. Seems kind of silly...
