Italy with Perillo Tours, Amsterdam on our own. Any tips?

The wife and I are thinking of taking a trip to Europe (we're in the US) before we settle down to have kids. I've been to England and France before. She's been to Germany and Holland. Here's our rough game plan:
Fly to Amsterdam. Stay there for a couple days. Visit the Heineken factory and some coffee shops. From there, fly to Rome, Italy which is where the "10 day Vesuvius Tour" from Perillo Tours starts. Visit Rome, Sorrento, Florence, Naples, Pompeii, Capri and Venice.

I would love to get some feedback from anyone who has been to these places, or has used Perillo in the past.
I'm thinking we could do the whole thing for about $10K.

If you are interested in tour companies, I'd check out Club ABC Tours. They have plenty of great tours of Amsterdam. They've also been in the business for over 45 years. So, their connections in Europe for accommodation and sites are out of this world!
