Ways to use Leftover Roast beef

There's only two of us left at home, with a bunch of oversized beef roasts in the freezer. I like to put the roast in the crockpot with potatoes, onions, and carrots for a really good meal. The left-over meat the next couple days usually goes to make two of the following meals:

BBQ beef on a bun
French Dip with melted provolone cheese and grilled oinions and green peppers
Croissant rolls (sliced lengthwise for a sandwich) with beef and melted velveeta cheese
Beef noodle soup with carrots and celery
Beef Stew (which also uses any leftover potatoes, carrots and onions from the first meal)

I'm looking for new ideas on how to use that leftover roast beef, do you have any suggestions?

Sandwiches of all kinds

Cut it up into chunks and toss them in a salad

Make some entres for guests, wrap thin slices of beef with cheese with something sweet (fruit or something).

Eat it as is

Make a sauce and eat it with the sauce.

EAT IT!

I never have left over roast beef because I always devour it completely.

These are good ideas. My recipes for roast beef usually go something like this:

1. Take roast beef
2. Shove into mouth
3. Fall asleep

The croissant roll idea sounds good. Sounds like a homemade type arby's deal. If I wasn't in ketosis I might try that one.

Pot pie! Add a can of veg-all or just veggies and a can of cream of mushroom or cream of potato soup and put it between two pie crusts, yummo! Did this Monday.

Getcha some tortillas, warm them up with a small amount of butter in a skillet until softened. Add a small pinch of salt when done.

Chop up some cilantro. Chop up some onion. Slice up an avocado.

Shred the roast beef.

Place roast beef in tortilla, add some cilantro, onion, a slice of avocado and a squeeze of lime over it and voila'!

Genuine tacos!!

Down here in Louisiana, we call it a Po' Boy. It got that name because back in the day, street vendors in New Orelans would sell a cheap lunch of a hunk of french bread with something (roast beef, fish, whatever was available). The poor folk bought that stuff, so it became known as the po' boy's lunch, eventually just called a "po' boy."

So, got yo'se'f a cold beer and go make yo'se'f some po' boy, cher! And don't be no coullion about it, just laissez les bon temps rouler!

Roast Beef Po' Boys

Makes about 6 sandwiches
For the beef filling:
2 to 3 pounds beef top round or chuck roast
Kosher salt and freshly ground black pepper
1/2 pound thick cut bacon, diced, about 6 slices
1 sweet onion, chopped
1/2 cup dry red wine
3 cups low sodium beef, veal, or chicken stock, or a mix
5 large cloves garlic, smashed
2 teaspoons Worcestershire sauce
3 tablespoons unsalted butter
3 tablespoons all purpose flour

To assemble:
French baguettes or hoagie rolls
Shredded lettuce
Sliced tomatoes
Mayonnaise
Provolone cheese (optional)

I always make a pasta bake with all my roast leftovers whether its chicken, beef or pork it works for whatever meats and i also use the leftover vegetables in it aswell i cut the meat up really small and mix it all together with whatever i want to throw in there then i make a cheese sauce (same as one you would use for lasagna) cook some pasta (whatever i have on hand) and combine it all together in a baking dish, grate whatever cheeses over the top i find cheddar and parmesan the best and then add some fresh breadcrumbs on top aswell and bake it until the top is crispy & brown. Great way to use leftovers because its really versatile and you can put in whatever you want and the cheese sauce makes it all blend well.
