1 (7 oz.) package Pamela's Simplebites Ginger Mini Snapz
3 tbsp. butter, melted
1 (12 oz.) can evaporated milk
2 large egg yolks
1 (11.5 oz.) package Ghirardelli semi-sweet chocolate chips
Whipped cream
First, the crust:
Heat oven to 350F.
Place the gingersnaps in the bowl of a food processor and pulse until they are ground into powder. Place the butter in a medium microwave-safe bowl; microwave until melted. Pour the ground gingersnaps into the bowl with the butter and stir until combined.
Pour the butter-gingersnap mixture until a large pie plate. Using the back of a spoon, spread the crumb mixture over the bottom and up the sides of the plate, filling any holes as you go.
Bake the crust for ten minutes, then place the pie plate on a wire rack to cool.
...and then the filling:
Whisk together evaporated milk and egg yolks in a medium saucepan. Heat over medium-low heat, stirring constantly, until the mixture is very hot and thickens slightly; do not boil. Remove from heat; stir in chocolate chips. Stir until completely melted and the mixture is smooth.
Pour filling into the prepared shell. Refrigerate until firm (at least three hours). Serve with homemade whipped cream.

Oh jeez and then there was the time I went to a sub sandwich shop and asked for olives and pickles...
and she said to me, "Are you sure you want all of the pickles?" She said it with a totally straight face too
